Authentic Crispy Gobi Manchurian Recipe: A Fusion Classic

Method
Parboil cauliflower florets in salted water for 3 minutes, then drain and pat completely dry.
Prepare a thick batter using cornflour, all-purpose flour, salt, and a little water. Coat the florets evenly and deep-fry in hot oil until light golden; remove and set aside. Double-fry them just before making the sauce for maximum crunch.
Heat 2 tablespoons of oil in a wok. Add the Whole Dried Red Chilies and half of the crushed Black Peppercorns. These should be bloomed in oil for 30 seconds until the chilies darken slightly and the oil becomes fragrant.
Add the ginger, garlic, and green chilies. Sauté on high heat until the raw smell disappears but do not brown the garlic.
Stir in the soy sauce, chili sauce, and ketchup. Mix 1 teaspoon of cornflour with 3 tablespoons of water and pour it in to create a glossy slurry.
Once the sauce thickens, add the double-fried cauliflower florets and toss rapidly to coat.
Finish the dish by sprinkling the remaining crushed Black Peppercorns and chopped Spring Onion Greens at the very end for fresh aromatic bite.
Notes
For the crispiest result, ensure the cauliflower is completely dry before coating in batter.
Double-frying is the secret to restaurant-style texture: fry once at 160C, then again at 190C for 1 minute.
The blooming of whole red chilies is essential; it infuses the entire sauce with a smoky heat without making it overly bitter.
Do not over-cook once the cauliflower hits the sauce, or it will lose its crunch.
